Recipe | Blueberry Banana Ice Cream

This recipe is a simple as it gets. All you need are some frozen bananas and blueberries to make a deliciously sweet antioxidant rich frozen dessert. The best thing about nice cream is that it is so healthy you can eat it for breakfast.  For me, this makes a nice change from porridge and smoothies.  It’s nice to mix it up sometimes.                                      

Ingredients

  • 2 large ripe frozen bananas
  • 1 cup of frozen blueberries
  • 6 tbsp’s of almond milk / milk of your choice
  • 1 tbsp peanut/ almond/ cashew butter
  • 1 tsp of maple syrup
  • Optional extras include maca, avocado , chia/ flaxseed.

Method

  • Add all the indgredients to a food processor or high speed blender.
  • Blend until smooth and creamy.
  • You may need to stop the machine and mix the indredients half way through.
  • Serve into a bowl and enjoy xx

    Mm! More recipes! I still haven’t gotten around to trying the last one I commented on. *sigh* Though, I did try a new recipe for hotteok (a Korean street food). It wasn’t quite right, but it’s kind of fun knowing what you might need to tweak next time. ^.^ Super jealous of your made yummy-food-making skills. :p

      It’s so much fun trying new recipes. Before I went plantbased, making food was such a chore. But for some reason it’s much more fun now because I have discovered so many more foods on my journey. I love Instagram, it has really inspired me.

        Haha! I’m so lazy when it comes to cooking. I want it done like… yesterday and I don’t want to be the one to make it. :p Reasons why I usually default to a couple of easy recipes. Maybe one day I’ll get around to trying something else. Haha!

        I’m actually in grad school now. Been back from Japan for a few months. :p But it has been a bit of a whirlwind. I can barely keep straight where I am. Haha!

        Envious of me? o.O Not possible. I’m boring.

        I actually don’t mind the cleaning up part (as long as I’m not the one doing the cooking :p). Though, I do dislike using all these measuring cups and utensils just for the cooking (which I still have to use because I don’t know how to eye-ball measurements.) Hee hee!
